Bacon Egg Bites
Ingredients:
1 package of Nitrate Free Bacon
6 Eggs (I like to use pasture raised if available)
1 cup of full fat ricotta
1 tbsp. of arrowroot powder
1/2 cup of shredded cheddar cheese
Salt and Pepper to taste
Directions:
Preheat oven to 350 F
Chop up bacon slices into small pieces and sauté in a pan. Once cooked, set aside and remove the oil from the pan.
In a large mixing bowl, add 6 eggs, salt, and pepper- whisk all together
Add ricotta, bacon, arrowroot powder, and cheddar cheese to the bowl- mix all together
Pour mixture into a muffin pan (spray well with olive oil spray)
Cook for 20-25 minutes or until golden brown on top
Store in the fridge for up to 4 days in an airtight container
