Bacon Egg Bites

Ingredients:

  • 1 package of Nitrate Free Bacon

  • 6 Eggs (I like to use pasture raised if available)

  • 1 cup of full fat ricotta

  • 1 tbsp. of arrowroot powder

  • 1/2 cup of shredded cheddar cheese

  • Salt and Pepper to taste

Directions:

  • Preheat oven to 350 F

  • Chop up bacon slices into small pieces and sauté in a pan. Once cooked, set aside and remove the oil from the pan.

  • In a large mixing bowl, add 6 eggs, salt, and pepper- whisk all together

  • Add ricotta, bacon, arrowroot powder, and cheddar cheese to the bowl- mix all together

  • Pour mixture into a muffin pan (spray well with olive oil spray)

  • Cook for 20-25 minutes or until golden brown on top

  • Store in the fridge for up to 4 days in an airtight container
