Brussel Sprout + Prosciutto Salad
Brussel Sprout + Prosciutto Salad:
Ingredients
2 bags of shredded Brussel sprouts
4-6 oz. of prosicutto
2 tbsp. extra virgin olive oil
1 tsp. garlic powder
1 tbsp. balsamic vinegar
1/4 cup pinenuts
1/4 cup crumbled goat cheese
1/4 cup dried cranberries
salt and pepper to taste
Tahini Dressing: 1/2 cup tahini, 4 tbsp. water, 1/4 cup olive oil, juice of `1 lemon, 1-2 garlic cloves, salt and pepper to taste
Directions:
Preheat oven to 375 F.
On a baking sheet, add Brussel sprouts. Toss in extra virgin olive oil, balsamic vinegar, salt, pepper, and garlic powder. Cook for 15-20 minutes, or until almost crispy. Add pine nuts and prosciutto, and cook for another 10 minutes.
To make the dressing: add all ingredients into a blender and blend until smooth.
Add Brussel sprout mixture to a large mixing bowl, and add goat cheese and dried cranberries. Toss in tahini dressing until evenly coated.
Serve and enjoy!
