Brussel Sprout + Prosciutto Salad

Brussel Sprout + Prosciutto Salad:

Ingredients

  • 2 bags of shredded Brussel sprouts

  • 4-6 oz. of prosicutto

  • 2 tbsp. extra virgin olive oil

  • 1 tsp. garlic powder

  • 1 tbsp. balsamic vinegar

  • 1/4 cup pinenuts

  • 1/4 cup crumbled goat cheese

  • 1/4 cup dried cranberries

  • salt and pepper to taste

  • Tahini Dressing: 1/2 cup tahini, 4 tbsp. water, 1/4 cup olive oil, juice of `1 lemon, 1-2 garlic cloves, salt and pepper to taste

Directions:

  • Preheat oven to 375 F.

  • On a baking sheet, add Brussel sprouts. Toss in extra virgin olive oil, balsamic vinegar, salt, pepper, and garlic powder. Cook for 15-20 minutes, or until almost crispy. Add pine nuts and prosciutto, and cook for another 10 minutes.

  • To make the dressing: add all ingredients into a blender and blend until smooth.

  • Add Brussel sprout mixture to a large mixing bowl, and add goat cheese and dried cranberries. Toss in tahini dressing until evenly coated.

  • Serve and enjoy!
