Italian Toasted Veggie Sandwich

Italian Toasted Veggie Sandwich:

Ingredients:

  • 1 bunch of basil leaves

  • 1 eggplant- sliced thin

  • 1 garlic clove

  • 2 handfuls of spinach

  • 1/4 cup sun-dried tomatoes

  • 1 ball of fresh mozzarella

  • 1 package of nitrate free salami

  • 2 tbsp. olive oil

  • 2 tbsp. balsamic vinegar

  • For the bread- use sourdough, focaccia or baguette (I used two small baguettes from the farmers market)

Directions:

  • Preheat the oven to 400 F

  • Line a baking sheet with parchment paper

  • On the baking sheet, add thin slices of eggplant and spray with olive oil spray, sprinkle sea salt and garlic powder on each slice. Bake in the oven for 15 minutes or until become golden brown

  • Cut the baguettes in half and place on the baking sheet. On each side of the bread, rub the garlic clove over the inside of the bread.

  • Drizzle olive oil on one side of the baguette, and balsamic vinegar on the other side. Repeat for the second baguette

  • Layer the salami on the bottom side of the baguette- 5-6 pieces for each sandwich. Layer the fresh mozzarella next- lay a thin layer on top of the salami

  • Layer the eggplant, then sun dried tomatoes, and top with spinach and fresh basil

  • Add top side of baguette onto sandwich

  • Cut in half and enjoy!

***This makes two sandwiches
