A dinner side dish: Italian Veggies

Sautéed Italian Vegetables:

Ingredients:

  • 1 package of mushrooms of your choice- I used small white buttons

  • 1 large white onion

  • 1 bag of frozen or fresh peas

  • 1 large zucchini

  • 2 garlic cloves, minced

  • Extra Virgin Olive Oil

  • Salt and Pepper to taste

  • Red Pepper Flakes

Directions:

  • On a wood cutting board, thinly slice the mushrooms, onion, and zucchini. Next, mince the garlic.

  • In a large skillet, add 2 tbsp. extra virgin olive oil with the minced garlic. Cook on medium high heat for 3 minutes.

  • Add mushrooms, onion, peas, and zucchini. Add another 2 tbsp. of extra virgin olive oil. Mix everything together.

  • Add red pepper flakes, sea salt, and pepper. Mix together.

  • Keep mixing on medium heat for another 10-15 minutes until vegetables are cooked.

  • Serve with your favorite protein of choice- steak, chicken parmigiana, meatballs, etc. or throw into a pasta or salad.
