A dinner side dish: Italian Veggies
Sautéed Italian Vegetables:
Ingredients:
1 package of mushrooms of your choice- I used small white buttons
1 large white onion
1 bag of frozen or fresh peas
1 large zucchini
2 garlic cloves, minced
Extra Virgin Olive Oil
Salt and Pepper to taste
Red Pepper Flakes
Directions:
On a wood cutting board, thinly slice the mushrooms, onion, and zucchini. Next, mince the garlic.
In a large skillet, add 2 tbsp. extra virgin olive oil with the minced garlic. Cook on medium high heat for 3 minutes.
Add mushrooms, onion, peas, and zucchini. Add another 2 tbsp. of extra virgin olive oil. Mix everything together.
Add red pepper flakes, sea salt, and pepper. Mix together.
Keep mixing on medium heat for another 10-15 minutes until vegetables are cooked.
Serve with your favorite protein of choice- steak, chicken parmigiana, meatballs, etc. or throw into a pasta or salad.
