GF Chicken Parmigiana

Chicken Parmigiana

Ingredients:

  • 4 pieces of chicken cutlets- pound the chicken if you would like thinner

  • 2 cups of Gluten Free Breadcrumbs mixed with 2 tbsp. freshly grated parmigiana- add more if needed for the amount of chicken you use

  • 3 Eggs- beaten with salt, pepper, garlic powder, red pepper flakes, and 2 tbsp. finely chopped Italian Parsley

  • Tomato Sauce

  • Fresh Mozzarella

  • Extra Virgin Olive Oil

Directions:

  • Preheat oven to 425F and line a baking sheet with parchment paper.

  • Coat the chicken in the egg mixture. L:et the excess egg drip off before place into the breadcrumb mixture. Once coated in the breadcrumb mixture, place on a plate until all chicken is properly coated.

  • In a large skillet over medium heat, coat the skillet with extra virgin olive oil. Once the oil is heated, add each chicken cutlet. Sear on each side for 2-4 minutes. Before placing the chicken cutlets onto the lined baking sheet, place the chicken on a plate with paper towel on it. This will help soak up the excess oil before baking in the oven.

  • Place the lined baking sheet with the chicken into the oven and cook for 15 minutes or until fully cooked through.

  • Add a thin layer of tomato sauce and fresh mozzarella on each piece. Cook for another 5-7 minutes until, or until cheese is fully melted.

  • Plate and Enjoy!
