Chicken Parmigiana
Ingredients:
4 pieces of chicken cutlets- pound the chicken if you would like thinner
2 cups of Gluten Free Breadcrumbs mixed with 2 tbsp. freshly grated parmigiana- add more if needed for the amount of chicken you use
3 Eggs- beaten with salt, pepper, garlic powder, red pepper flakes, and 2 tbsp. finely chopped Italian Parsley
Tomato Sauce
Fresh Mozzarella
Extra Virgin Olive Oil
Directions:
Preheat oven to 425F and line a baking sheet with parchment paper.
Coat the chicken in the egg mixture. L:et the excess egg drip off before place into the breadcrumb mixture. Once coated in the breadcrumb mixture, place on a plate until all chicken is properly coated.
In a large skillet over medium heat, coat the skillet with extra virgin olive oil. Once the oil is heated, add each chicken cutlet. Sear on each side for 2-4 minutes. Before placing the chicken cutlets onto the lined baking sheet, place the chicken on a plate with paper towel on it. This will help soak up the excess oil before baking in the oven.
Place the lined baking sheet with the chicken into the oven and cook for 15 minutes or until fully cooked through.
Add a thin layer of tomato sauce and fresh mozzarella on each piece. Cook for another 5-7 minutes until, or until cheese is fully melted.
Plate and Enjoy!
