Pasta Carbonara
Pasta Carbonara
Ingredients:
1 lb. of long pasta noodles- I like to get mine from a local Italian bakery where they make them homemade
2 egg yolks
1 full egg
4 oz. pancetta- I get this behind the deli meat counter at the grocery store and ask for it be cut in half inch slices- 2-3 slices usually equals 4 oz.
1/2 cup Freshly Grated Parmigiana Cheese
1/4 tsp. Black Pepper
Directions:
In a mixing bowl, whisk together the 2 egg yolks and 1 full egg with parmigiana cheese and black pepper. Whisk well. Set aside.
In a medium size skillet, over medium heat, add chopped up pancetta and cook for 5-8 minutes. or until golden brown. Set aside in a bowl once done cooking.
Boil a large of water for the pasta noodles. Add salt to the water and cook the noodles according to the package. Reserve 1/4 cup pasta before draining the pasta noodles. Let the pasta noodles cool a couple minutes in the colander before mixing with the egg mixture to avoid scrambling the eggs.
Add the pasta noodles to a serving plater and pour pasta water and egg mixture on top. Toss everything together. Top with more parmigiana cheese
