White Bean + Kale Soup
White Bean + Kale Soup:
Ingredients
3 cans of cannellini beans
1 box of vegetable broth + 1 cup of vegetable broth
2 tbsp. of olive oil
1 medium size yellow onion- diced
2-3 carrots- diced
2-3 stalks of celery-diced
2-3 handfuls of kale
4 garlic cloves- minced
2 tsp. of dried parsley
red pepper flakes- add as much as you want depending on how hot you like it, I add 1 tsp.
2 tsp. of dried rosemary
2 tsp. of dried thyme
Directions:
Rinse 1 can of cannellini beans. Add to a blender with 1 cup of vegetable broth and pure until smooth liquid. Set aside
In a large pot, sauté onion and garlic in olive oil for about 3-4 minutes
Add celery and carrots,- sauté for about 5-6 minutes
Add 1 box of vegetable broth and the remaining 2 cans of cannellini beans (rinse beans before adding to the soup). Add dried spices at this time- thyme, parsley, rosemary, red pepper flakes
Simmer for about 20 minutes and then kale
Once kale is added, cook for another 10 minutes
Serve and Enjoy! Optional to add fresh parmigiana
