White Bean + Kale Soup

White Bean + Kale Soup:

Ingredients

  • 3 cans of cannellini beans

  • 1 box of vegetable broth + 1 cup of vegetable broth

  • 2 tbsp. of olive oil

  • 1 medium size yellow onion- diced

  • 2-3 carrots- diced

  • 2-3 stalks of celery-diced

  • 2-3 handfuls of kale

  • 4 garlic cloves- minced

  • 2 tsp. of dried parsley

  • red pepper flakes- add as much as you want depending on how hot you like it, I add 1 tsp.

  • 2 tsp. of dried rosemary

  • 2 tsp. of dried thyme

Directions:

  • Rinse 1 can of cannellini beans. Add to a blender with 1 cup of vegetable broth and pure until smooth liquid. Set aside

  • In a large pot, sauté onion and garlic in olive oil for about 3-4 minutes

  • Add celery and carrots,- sauté for about 5-6 minutes

  • Add 1 box of vegetable broth and the remaining 2 cans of cannellini beans (rinse beans before adding to the soup). Add dried spices at this time- thyme, parsley, rosemary, red pepper flakes

  • Simmer for about 20 minutes and then kale

  • Once kale is added, cook for another 10 minutes

  • Serve and Enjoy! Optional to add fresh parmigiana
