Chicken Parmigiana Meatloaf
Ingredients:
2 lbs. of ground chicken
1 cup gluten free breacrumbs
2 eggs
1/2 cup freshly grated parmigiana
1 tsp. garlic powder
1 tsp. red pepper flakes
1 tsp. onion powder
salt and pepper to taste
Tomato Sauce- either homemade or I like the carbone brand
Freshly shredded mozzarella cheese
Directions:
Preheat oven to 400 F. Spray a large baking dish with olive oil spray and set aside.
In a large mixing bowl add ground chicken, gf breadcrumbs, eggs, parmigiana, garlic powder, onion powder, red pepper flakes, salt and pepper to taste. Mix everything together thoroughly.
Place chicken mixture into the baking dish. Form into a loaf. Make sure it’s not too thick in the middle so it cooks properly.
Spread a thin layer of tomato sauce on top of the meatloaf.
Bake in the oven for 45 minutes.
Add more sauce on top and shredded mozzarella.
Bake for another 10-15 minutes.
Slice into thin pieces and enjoy!
