Chicken Parmigiana Meatloaf

Ingredients:

  • 2 lbs. of ground chicken

  • 1 cup gluten free breacrumbs

  • 2 eggs

  • 1/2 cup freshly grated parmigiana

  • 1 tsp. garlic powder

  • 1 tsp. red pepper flakes

  • 1 tsp. onion powder

  • salt and pepper to taste

  • Tomato Sauce- either homemade or I like the carbone brand

  • Freshly shredded mozzarella cheese

Directions:

  • Preheat oven to 400 F. Spray a large baking dish with olive oil spray and set aside.

  • In a large mixing bowl add ground chicken, gf breadcrumbs, eggs, parmigiana, garlic powder, onion powder, red pepper flakes, salt and pepper to taste. Mix everything together thoroughly.

  • Place chicken mixture into the baking dish. Form into a loaf. Make sure it’s not too thick in the middle so it cooks properly.

  • Spread a thin layer of tomato sauce on top of the meatloaf.

  • Bake in the oven for 45 minutes.

  • Add more sauce on top and shredded mozzarella.

  • Bake for another 10-15 minutes.

  • Slice into thin pieces and enjoy!
