Healthy Chicken Bites

Ingredients:

  • 2-3 large chicken breasts, cut into small cubes (I like to choose organic and/or pasture raised when available)

  • 2 large eggs, whisked in a bowl

  • 1 bag of Siete Chips or Simple Mills Crackers, brown down into crumbs either from a food processor, blender, or place in a ziplock bag and break using a meat tenderizer , place into a mixing bowl

  • 1 cup gluten free flour, mixed with black pepper, salt, red pepper flakes, onion powder, and garlic powder (just sprinkle a little of each), place into a mixing bowl

  • Freshly grated parmigiana cheese

Directions:

  • Preheat oven to 425 F and line a baking sheet with parchment paper.

  • Coat the cubed chicken into the flour mixture, then the egg mixture, and lastly the breadcrumb mixture. Line all the chicken bites onto the baking sheet

  • Sprinkle parmigiana cheese onto each chicken bite.

  • Place in the oven and bake for 15-20 minutes or until fully cooked through.

  • Serve and Enjoy!
