Healthy Chicken Bites
Ingredients:
2-3 large chicken breasts, cut into small cubes (I like to choose organic and/or pasture raised when available)
2 large eggs, whisked in a bowl
1 bag of Siete Chips or Simple Mills Crackers, brown down into crumbs either from a food processor, blender, or place in a ziplock bag and break using a meat tenderizer , place into a mixing bowl
1 cup gluten free flour, mixed with black pepper, salt, red pepper flakes, onion powder, and garlic powder (just sprinkle a little of each), place into a mixing bowl
Freshly grated parmigiana cheese
Directions:
Preheat oven to 425 F and line a baking sheet with parchment paper.
Coat the cubed chicken into the flour mixture, then the egg mixture, and lastly the breadcrumb mixture. Line all the chicken bites onto the baking sheet
Sprinkle parmigiana cheese onto each chicken bite.
Place in the oven and bake for 15-20 minutes or until fully cooked through.
