Roasted Sweet Potato Rounds
Ingredients:
4 large sweet potatoes
Olive Oil
Sea Salt
Garlic Powder
Ground Black Pepper
Directions:
Preheat oven to 400 F.
Slice the sweet potatoes into thin circular shapes.
Boil the sliced sweet potatoes in water for 10 minutes.
Spray a sheet pan with EVOO. Place sweet potato rounds onto the sheet pan. Drizzle with olive oil. Season with salt, garlic powder, and ground black pepper.
Bake in the oven for 30 minutes or until crispy.
Plate and enjoy!
