Roasted Sweet Potato Rounds

Ingredients:

  • 4 large sweet potatoes

  • Olive Oil

  • Sea Salt

  • Garlic Powder

  • Ground Black Pepper

Directions:

  • Preheat oven to 400 F.

  • Slice the sweet potatoes into thin circular shapes.

  • Boil the sliced sweet potatoes in water for 10 minutes.

  • Spray a sheet pan with EVOO. Place sweet potato rounds onto the sheet pan. Drizzle with olive oil. Season with salt, garlic powder, and ground black pepper.

  • Bake in the oven for 30 minutes or until crispy.

  • Plate and enjoy!
